This review comprehensively focuses on pectin, a versatile plant-derived polysaccharide with diverse applications in food, pharmaceutical, environmental, and industrial domains. The article presents the latest technological advancements in pectin extraction from diverse botanical sources. The discussion highlights innovative methodologies and optimized extraction parameters that enhance both yield and purity. Exploring pectin’s structural characteristics and their critical relationship to functional performance, underpinning its multifunctional applications. Particular emphasis is placed on emerging sustainable extraction approaches that align with the growing demand for natural biomaterials. The review concludes by identifying main research directions that will drive future developments in this field, reflecting pectin’s significantly as an eco-friendly functional ingredient.
