Balanced protein nutrition of fish as a key factor in high-quality fish products

The paper discusses the effects of soy protein hydrolysate on the productivity and physiological state of sturgeon and salmon fishes, which are the most promising objects of commercial fish farming. The data obtained in the experiment suggests that the addition of soy protein hydrolysate to the diet increases sturgeon productivity by 6.99%, the survival rate by 4%, while in rainbow trout – by 12.2%, and by 2.2% respectively. A study of the main morpho-biochemical parameters of blood was also conducted, and the corresponding findings suggest that the introduction of soy protein hydrolysate into the diet of sturgeon did not cause significant changes in the metabolism of fish. The resulting fish has high marketable qualities and is safe to eat.
