First derivative (Δ) UV-VIS absorbance spectra of Mexican monovarietal Merlot wines with different aging schemes (samples 1 to 11, refer colour code to figure legends and Materials and Methods) acquired at pH = 3.9. As in Fig. 1, absorbance region at 715 nm is expanded.
