The dependence of vitamins in the content of ready-made raisins on drying methods

Abstract

Now, in the process of globalization of the world economy, one of the most important priorities of the economic policy of each country is to further increase the country's export potential and ensure its competitiveness in the world market. In this article, the preparation of dried products from grapes is one of the rapidly developing areas of agriculture in Uzbekistan, and consistent economic reforms in agriculture can fully satisfy the population's demand for quality dried food products and at the same time prevent food insecurity, which is one of the biggest problems of today. As the amount of grape cultivation from agricultural products increases, it is necessary to rationally implement the process of their storage and processing, for this purpose, the creation of new modern grape drying equipment, the application of science and technology and advanced technologies in this regard, and the consistent study of foreign experimental achievements into the production process. It would be appropriate to introduce it widely. The article contains scientifically based information on the preservation of vitamins and other biologically active substances contained in the product in the drying methods we offer.
